Aioli with Black Garlic

Ingredients:
- 3 cloves black garlic (mashed)
- 1 egg yolk (room temp)
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- ¼ tsp kosher salt
- ¼ cup extra virgin olive oil

Method:
1. Mash black garlic into a smooth paste.
2. Whisk egg yolk, mustard, lemon juice, and salt until well combined.
3. Slowly add oil drop by drop while whisking vigorously until thick. Gradually increase speed as it thickens.
4. Whisk in black garlic paste and let the aioli sit for 10 minutes to meld flavors.

Banana Smoothie with Black Garlic

Ingredients:
- 1 large banana
- 2 cloves black garlic
- 200ml oat milk / almond / other plant milk (adjust for consistency)
- 1 tsp honey
- 1 tsp peanut butter
- ¼ cup oats
- 1 tsp Nutella (optional)

Method:
1. Place all ingredients into a blender and blend to desired consistency.
2. Drink immediately.

Tip: Adding black garlic sweetens the smoothie and adds antioxidants.

Black Garlic Vinaigrette

Ingredients:
- 4–5 cloves black garlic (mashed) or 1 tbsp black garlic purée
- 1 tsp Dijon mustard
- 1 pinch kosher salt (or fine sea salt)
- 2 tbsp red wine vinegar- 2 tbsp extra virgin olive oil- Freshly cracked black pepper, to taste

Method:
1. Mash black garlic into a smooth paste.
2. In a small bowl, whisk in mustard, salt, and pepper.
3. Pour in vinegar and olive oil.
4. Whisk until thick and fully emulsified.
5. Store in a glass jar in the fridge for up to 2 weeks.

Black Garlic Marinade

Ingredients:
- 2 tbsp aged balsamic vinegar
- 2 tsp olive oil
- 2 tsp tomato paste
- 1 tsp brown sugar
- 1 tbsp black garlic purée

Method:
1. Mix all ingredients in a bowl or jar until smooth.
2. Coat meat or vegetables generously.
3. Let marinate in fridge for at least 30 mins (or overnight for deeper flavor).
4. Cook as desired: grill, pan-fry, or roast.Note: Black garlic adds a deep, sweet, earthy flavor with no sharp garlic bite.

Chocolate Chip Cookies With Black Garlic

Ingredients:
- 2 cups (280g) plain flour
- ½ tsp bicarbonate of soda
- ¾ tsp salt
- 1 cup (227g) unsalted butter
- 1½ cups (240g) white sugar
- ¼ cup (50g) brown sugar
- 1 egg
- 1 tsp vanilla essence
- 2 tbsp water
- 170g dark chocolate, chopped
- 6 cloves black garlic, chopped

Method:
1. In a bowl, whisk together flour, bicarbonate of soda, and salt.
2. In another bowl, cream butter and sugars for 3+ minutes until pale and fluffy.
3. Add egg, vanilla, and water; beat until fluffy.
4. Mix in flour mixture, then fold in chocolate and black garlic.
5. Scoop dough into ¼ cup-sized balls, place on lined tray, and freeze while preheating oven to 175°C.
6. Bake for 10 minutes, then tap the pan on the oven rack to create crinkled edges.
7. Bake for 6 more minutes, tapping pan a few times until golden brown.
8. Cool for a few minutes, then transfer to wire rack.
